This has been a busy summer so far! We have been canning potatoes, pickling okra and cucumber, making strawberry jam, curing bacon, and freezing zucchini. We also were able to make a trip to Florida to visit family and friends that we haven’t seen in too long. The irony isn’t lost on us that the busiest time on the farm seems to be the most likely time for us to travel!

Our spring potato harvest was excellent, with a ratio over 7:1 (a 50′ row uses 10# seed potatoes, but yields 70#). The cellar is too hot to store them, so they get canned. We planted two rows for fall harvest and storage. The onions, however, were almost a total loss. We think the heavy soil just kept them too wet during this rainy summer we’ve had.
